Cabbage with Eggs and Fish Sauce
My parents were born in Vietnam and fled to the United States after the war. Although, I don't speak the language because our primary language at home was Chinese; we do have a lot of Vietnamese influences growing up.
One delicious peasant dish you won't find in Vietnamese restaurants but is prepared regularly at home is boiled cabbage with eggs and fish sauce concoction.
The sauce is quite easy and the amount is subjective to taste.
Rice wine vinegar
Hard boiled egg broken up with a fork
I made this dish a lot in college because it was cost effective and reminded me of home. My roommates (one Cambodian and the other Mien) loved the dish.
