
The aroma coming out of the oven is comforting, it reminded me of my mom slaving over the stove almost everyday as a child. The chicken releases a lot of gravy perfect to pour over rice, soak it up with bread or mixed with steamed vegetables.

Soy Sauce Garlic Baked Chicken Packages
Serves 2
4 Pieces of Chicken Thighs and/or drumsticks
8 whole garlic cloves, crushed and peeled
Soy Sauce, low sodium
black pepper and/or black peppercorns
Preheat oven to 350 degrees
Trim the skin and fat off the chicken. Place the chicken in an aluminum foil large enough to cover the chicken. Drizzle soy sauce over chicken according to taste. Place 2 garlic cloves in each package. Sprinkle fresh grounded black pepper.
Bake for 40 mins
*Open up the packages for the last 10 mins in the oven for a more deeper and crispier skin. (optional)
Serve with rice or bread and salad.

The recipe is simple but a winner each time. My roommates use to come out of nowhere when they smell the chicken baking. A very healthy dish, since we were trying to get lose our Freshmen 15.
