I bet most of the ingredients listed above is sitting in your kitchen. Go ahead. I'll wait, take a peek in your pantry. I used Buitoni Riserva's Chicken and Four Cheese Ravioli for my 'Girls' Night Out' dinner party. However, your favorite pasta noodle or stuffed pasta will work too.


Curry Sun Dried Tomato with Bell Peppers
serves 2
4 whole pieces of sun dried tomatoes
4 Tablespoon of Extra Virgin Olive Oil
1 Tablespoon Flat Leaf Parsley, chopped
1/2 Bell Pepper, chopped
1 teaspoon curry powder
9 oz of your favorite pasta
salt
pepper
nutmeg (optional)

Chop sun dried tomatoes to fine pieces. Stir curry powder with olive oil until incorporated, grate a pinch of fresh nutmeg (optional). Add sun dried tomatoes and parsley and salt and pepper to taste.
Cook pasta according to direction. Drain and toss with sauce and bell peppers.

I served the pasta room temperature, next time I'm going to try it with whole wheat pasta and radishes. The flavors get better and even more complex the next day. This recipe is an easy way to ease someone into trying curry.
I served the pasta dish with purple and white cauliflower gratin.
