Pasta, Pancetta and Peas

Pancetta, Peas, Onion, Pasta

I really love peas. Like really. I often find myself defrosting a whole bag of peas, toss it with balsamic and olive oil and eat it with toasted bread for lunch. Pork fat and peas go even better together, add in some onions and I'm a happy camper. My love for onions is another story, just say I could take a bite out of a onion like Snow White.

For my 'Girls' Night Out' Buitoni's dinner party I took the opportunity to share my love peas.

PancettaParmesan Reggiano

Pasta, Pancetta and Peas
adapted from Sunny Anderson

serves 2

9 ounces pasta or stuffed pasta
6 ounces pancetta, diced
1/2 red onion, chopped
1 (10-ounce) bag frozen peas
2 cloves garlic, minced
1/4 cup grated Parmesan
Salt and freshly ground black pepper

Boil pasta according to package, drain. Saute pancetta until crisp 6 mins and reserve on paper towels. Saute garlic and onions until translucent and throw in peas. Stir until the peas turn green and immediately toss in pasta and parmesan. Season with salt and pepper.

*The original recipe adds some of the pasta water to loosen the sauce. I like it without the water as the frozen peas releases enough water.

I am going to use bacon next time because pancetta is harder to find and expensive at a small local supermarket.
