
All the restaurants are doing it, you should too - shave. I noticed shaved Brussels sprout, shaved fennel, shaved Parmesan Regianno, shaved endives, shaved 'insert your favorite vegetable.' Shaving vegetables yield an elegant presentation.
I really love the first "shave" of fennel, the strong aroma of licorice wakes me up. I opted for a shaved theme salad - fennel, onion, asparagus, and Parmesan. I used a mandolin for the fennel and onions and a vegetable peeler for the asparagus and Parmesan.
No waste in Bonnibella's house, I used the fennel flowers in my vinaigrette.
Shaved Fennel and Asparagus Salad
per serving2 shaved fennel slices
3 asparagus
1 shaved red onion slice
as much Parmesan Regianno as one desires

Lemon Fennel Flower Vinaigrette
6 Tablespoon extra virgin olive oil
2 Tablespoon of lemon juice
1 Tablespoon of minced fennel flowers
1 Tablespoon of minced shallot or garlic
salt and pepper to taste
Whisk all of the ingredients together.
