The oatmeal crumble was quick and easy AND I didn't even have to leave the house to go to the supermarket. I had everything ready at home! I love recipes where I know I have all the ingredients right now! The house also smelled so sweet and "bakery."
The portion size was perfect for one person split between two meals or to share with a love one. Whip out the candlelight and music by Journey and call it a romantic date.


Peach and Blueberry Oatmeal Crumble
1 peach
1 pint of blueberries
3/4 Cup of quick oatmeal
1/4 Cup of Brown Sugar
1 Tablespoon of honey
2-4 Tablespoon of butter
Preheat oven to 350 degrees. Peel the peach and cut the peach into chunks. Combine the honey, peach and blueberries and fill into four 4 oz ramekins. Mix the brown sugar and quick oatmeal and cover each ramekin with the topping. Dot each ramekin with 1/2-1 Tablespoon of butter. Bake for 30-35 mins. Serve with ice cream (optional.)

*I am trying to cut out white sugar when baking so I tried using honey and it worked out fine. Add more if you like it sweeter but I like the natural sweetness and tartness from the fruits. I also like Trader Joe's hot cereal mix for the topping because it has rye, barley, oats and wheat. If you find 1/2 Tablespoon of butter not enough to keep the topping moist, try using 1 Tablespoon. I actually like the crunch of the oatmeal topping.
The best part of eating this dessert alone is licking the ramekin clean. My dog is my only witness when I lick the bowl clean.

Crumble anything is always a favorite of mine. Very rustic and homey.
