The scene is perfect, the lighting is stupendous and I'm in the perfect moment when I "click" my camera to only find out I forgot to put in the battery. Story of my life, so I am not surprise when my oven decided to not turn on. Actually, my oven decided not be like my refrigerator and "run" so I can't "catch" it because I need a brand new one. Merry f##king Christmas to me.
Like most backstabbing friends, my oven decides to pick the perfect moment to not work. Two days before I meet fellow food bloggers for lunch and a cookie exchange. But like MacGyver I whittle my way out of the backstabber and make no-bake cookies. Actually, I've been meaning to make these cookies so there is a silver lining.

I tweaked the recipe a little because the first batch I made via allrecipe.com was too sweet and not enough oats.
No Bake Cookies

3 1/4 Cups of Quick Cook Oats
4 Tablespoon unsweetened cocoa powder
1 1/2 Cups of Sugar
1 stick of unsalted butter
1/2 Cup of Crunchy Peanut Butter
1/2 Cup of Milk
1 teaspoon of Vanilla
Put butter, milk, sugar, and cocoa powder in a heavy pot and bring to a boil. Once the mixture is at a full boil, let it boil for 90 seconds. Take the pot off the stove and stir in peanut butter, vanilla and oats.
Drop the cookies like it's hot with a spoon (Actually it is very hot) onto a parchment paper lined cookie sheet. Let cool and chomp.
The variations are endless! I am thinking about using nutella, marshmallow, cheerios, pretzels and even potato chips next time. I think frito chips would work really well.

Pretty, pretty pictures. These no bake cookies are always a nice option, especially in the summer if you don't want to turn on the oven. :)
